Shortcut to Fabulous Five Minute Salsa

With Fall and Football season here, having a fresh and uber flavorful salsa to serve guests is a must in every fabulous girl’s arsenal. This salsa can be whipped up in five minutes and will make you feel like you are dining on the Mexican Riviera! I recommend serving this salsa with blue corn tortilla chips or you can whip up some quesadillas with torn pieces of rotisserie chicken, cream cheese spread on one side of the tortilla, Mexican blend shredded cheese and sliced red onions sandwiched between two tortillas and baked in 400 degree oven for about 10 minutes.

The key to this recipe is the use of a food processor or an electric food chopper, which can be purchased for under $15 at a drug store or big box superstore like Target, or here for under $10. Every fabulous girl must own one of these little choppers. They change your culinary life!

Ingredients- The beauty of this recipe is that measurements do not need to be exact, so eyeball it and have fun

1 Tablespoon minced garlic

5 plum tomatoes quartered

½ teaspoon of salt

Lemon juice from 1/4 lemon

½ small yellow onion chopped

¼ to ½ jalapeno (to reduce heat remove some of the seeds) sliced

1/4 cup of cilantro (one small handful, stems and all)

Cut onion into wedges and place in chopper with jalapeno and cilantro. Pulse in chopper for about thirty seconds. Add garlic and tomato and pulse in chopper for another thirty seconds. Add salt, lemon juice to chopper and pulse until you have desired consistency. I like mine a little chunky.

So, get your chip and dip bowl out, plug in your chopper and enjoy this shortcut to fabulous five-minute salsa!

Shortcut to Fabulous Shopping for a Cause

But the most fabulous thing about Miami is all of the fun and creative residents who work to create a better community. I am privileged to know many of these residents and work with some of them through Junior League of Miami.  This week Junior League of Miami’s Shopping Card for a Cause is on sale. The $50 card entitles cardholders to a 20% discount at over 200 retailers in south Florida including some of my favorites:  Banana Republic, Books and Books, Brooks Brothers, J. Crew, Kate Spade and Wolfs Wine Shop.

The Best Part: 100% of the $50 card purchase supports the mission of the Junior League of Miami and community projects for women, children and families at risk in Miami.

This is a great way to help the community and save some money if you plan on spending more than $250 at any of the participating retailers. I like to buy the card and stock up on wine from Wolfs for all of the holiday parties that I am sure to attend! Then, I buy my husband some shirts for Christmas at Brooks Brothers. I finish off with a trip to Banana Republic and Books & Books to get some nice tops and jewelry for my sister and mother-in-law and some books for my nephews. Last year I spent about $380 had a net savings of $26. Not bad for helping my community and getting a jump-start on my holiday shopping! Shortcut to Fabulous Halloween Fun for the Young

Mall Events

House of Terror Amusement Park at Miami International Mall

Enjoy a haunted house built just for kids, a huge maze, carnival rides, lots of food, concerts and much more from 6 pm to midnight.  Admission is $20 for adult and $15 for children under 10.

Radio Disney Trick or Treat Street Party

Event includes fun Radio Disney tunes, costume contests and treat-or-treating through Southland Mall from 1 pm to 6 pm. Event is Free.

Bayside Marketplace Halloween Event

Miami Childrens Museum 1st Annual Fall Festival

Monster Splash Nighttime Bash at the Miami Seaquarium

This is my pick for Miami’s Theme park Halloween fun. This event promises trick or treating for kids in costume, two haunted houses, the new buried alive haunted attraction ,a skeleton walk, sac races, pumpkin carving contests, Halloween themed shows and carnival rides from 5pm to midnight! Admission is $24.94 for adults and $21.95 for children.

Parrot Jungle Island

1111 Parrot Jungle Trail, Miami

Enjoy safe trick-or-treating with candy stations located all over the park and enter the costume contests. Eating contests, arts and crafts and a whole lot more spooky, silly fun from 10 am to 6 pm. Admission for adults and kids $13 and children in full costume $7.
